Big Jo has siblings aplenty – Westerns Laundry, Jolene and Primeur – but Jo is the team’s bakery HQ with its own flour mill, fermentation lab and grain silos and a stonking big oven for firing out sourdough pizzas. There are also flaky pastries and cakes – blood-orange Danishes, apple turnovers and croissants, madeleines, financiers – which tend to disappear fast, as well as sandwiches made from the sourdough baked here and slathered with whatever the kitchen has in that day. Opt for one with all the fixings – the Hoi-An special comes with juicy pork belly, sticky pork char siu and egg omelette with carrot, cucumber, crisp coriander and pickled daikon on a crunchy baguette.
